STATE OF THE BOSTON BURGER

EA_Burgers

I’m often asked what my favorite burger is, and the reflex response has always been Craigie on Main. Don’t get me wrong, it’s still the tops, but please don’t overlook The Gallows, Market or Harvest, or you’d be missing out on greatness. Continue reading

TOASTY BUNS

The beef has been talked about, and I’ve devoted an entire column to condiments. But what about the rest of it? Not to be overlooked is the bun. Continue reading

BURGER LOVE

Boston Burger Blog’s Richard Chudy weighs in weekly in all matters meat.

Where’s the burger love, people? Forget hip hop wars, the East Coast vs. West Coast burger battle wages on. While some are devoted to one burger place or another, no single establishment stands out in Boston, at least not in my mind. Sure, we have the O’Sullivan’s fan club, and the Bartley’s loyalists, I’d even sneak in the UBurger and Tasty Burger crowd, but we have no equivalent of In-N-Out, or even a Shake Shack, don’t even try to hit me with a 5 Guys plea. I’m not even talking quality necessarily; I’m looking for the passion and to a lesser degree, the success of an In-N-Out.  The first thing I do when I travel to the West Coast is to head straight for an In-N-Out, how many people on the other side of the country can say that about any of the burgers here? Are Boston burgers not that great or are we just not that excited about them? While I have my burger loves, I can’t say I’m 100% devoted to any of them, I like many, but don’t frequent any, partly because I’m always looking for the next great burger, but maybe there’s more to it than that. BACK TO SCHOOL BURGERS

Boston Burger Blog’s Richard Chudy weighs in weekly in all matters meat.

50,000 U-Haul’s can’t be wrong. The onslaught of broken desks on the sidewalk and the T bombarded with inebriated youngsters must be the sign of a new school season. Like it or not, students are everywhere, and this past-his-prime thirty year-old who still fancies himself as being “hip” to the scene is relatively indifferent. As much as I wish I could hang like I used to (spoiler alert , I could never “hang”) most nights I fall asleep by 10:30 to reruns of Murphy Brown. But for those students who are new to town, allow me to pop your Boston burger cherry. For those who are returning to the Hub after a summer spent at mom and dad’s, perhaps a refresher on the city’s best burger choices is in order. Different burgers satisfy numerous needs and situations, but for the academic type who’s watching their wallet (and really, aren’t we all?) the following burgers should appease everyone. HOME-COOKED BURGERS

Boston Burger Blog’s Richard Chudy weighs in weekly in all matters meat.

I’ve been searching for the best burger in Boston for a couple of years now, but maybe the best burger is right at home and I didn’t even know it. I’m anything but lenient to restaurants and chefs who serve up burgers, nitpicking every painstaking detail, surely I should expect nothing less from my own cooking. I’m a chef myself, so it should be an easy task. Never mind all the “research” I’ve done, making the perfect burger at home should be a cinch, or so I thought. I could probably just skip ahead to the results I expect to find, but where would the fun in that be? Only two experiments in, and my burgers have left a little something to be desired. But that’s what happens when you start with the most rudimentary of cuts; Sirloin and Chuck. Continue reading

IS IT EVEN A BURGER?

Boston Burger Blog’s Richard Chudy weighs in weekly in all matters meat.

For some reason I thought it might be a good idea to test the market for non-beef burgers. The debate continues; is a veggie, turkey or seafood based burger even a burger? I’ve covered that topic before, but it’s far from over. The real challenge has been finding suitable replacements for the real thing that make you forget it’s not ground beef to begin with. Are we calling our beloved veggie burgers as such because they’re shaped like a normal burger or because they taste like one? Certainly the former more than the latter, but based on my first go-around, the taste usually leaves a little something to be desired. Continue reading

WHAT HAPPENED TO THE HAMBURGER?

IMG_0430

In the humblest of circumstances, we know what we like and can agree on how it should look. The taste is subjective, but perhaps it ought to be more universal. I like gourmet as much as the next guy, but in a burger, shouldn’t we be scaling back just a bit? Continue reading
