Drinking cheese. It’s gross. Even when it’s good cheese. So don’t. It’s most likely bad for your heart, (amongst other things). But if for some reason, maybe it’s something from your past, or some lactose-based bucket list thing of yours (and oddly enough, it’s not even the weirdest thing in there), if you really must, here you go.
Meet the “Uh-Oh Reposado”, available now at Post 390 in the Back Bay. You can thank beverage manager Jason Percival for it. And you can thank the classic Spaghettio’s jingle for the name; the housemade tomato-parmesan water base used in the drink smells just like the staple middle-class childhood dinner-in-a-can (the drink, thank god, does not).
Percival says it’s something the kitchen whips up for the bar. “They slowly cook tomatoes so they break down, and then hang them in cheesecloth so the clear liquid runs out,” he says. “I took the hard ends of Parmesan cheese wheels…simmered them in the tomato water, and strained away any of the fat once cooled. In the drink its much more subtle against the flavor or tequila and sugar but it gives it a creamy feel and savoriness you only get from dairy.”
They throw in some reposasdo tequila, a little jalapeno and cilantro for an herbal bite, and give it a good double strain after shaking over ice. It’s even garnished with a thin, toasted parmesan “tuile”, which we think is French for “hey look there’s cheese on this drink”.
Probably not. Anyway…cheese drink.
UH-OH REPOSADO (pictured above)
1.5 ounces reposado tequila
1.5 ounces tomato parmesan water
.5 ounces simple syrup
.5 ounces fresh lime
Shake over ice and double strain. Garnish with a toasted parmesan tuile.
